Buying guide: Mezcal

Our mezcal selection covers 219 products from 52 brands, with Oaxaca the most common production region in the listings that state one (83). Mezcal rewards careful buying: many expressions are small batches from a single maestro mezcalero, so availability and lot details matter as much as the brand.

The three mezcal categories

Mexico's mezcal standard, NOM-070-SCFI-2016, defines three categories that must appear on the label. Mezcal allows modern equipment such as autoclaves and column stills. Mezcal Artesanal requires traditional methods such as pit or masonry ovens, crushing by mallet, tahona or mill, and direct-fire distillation in copper or clay pot stills. Mezcal Ancestral is the strictest: pit-oven cooking, crushing by hand, mallet or tahona, and direct-fire distillation in clay pots. The category shapes both price expectations and the story your customers will hear, so we always confirm it from the label rather than from marketing copy.

Agave species and expressions

Espadín (Agave angustifolia) is the most widely planted mezcal agave and the most practical choice for consistent volumes. Wild and semi-wild agaves — tobalá, arroqueño, cupreata, papalote, jabalí and others named in our listings — take many years to mature and are often available only in lots of a few hundred bottles. Ensambles blend species. “Pechuga” and other destilado con expressions add a further distillation with fruit, spices or protein, which can matter for destination labelling.

Planning for small batches

  • Ask for the lot or batch number, bottle count and production date with every quotation.
  • Expect expression names and agave species to vary between batches; plan menus and listings accordingly.
  • Hand-applied labels and natural closures need extra protective packaging for ocean freight.
  • Only 3 of the 219 mezcal listings published a bottle size, so format is confirmed per request.

Certification and origin evidence

Mezcal is protected by a denomination of origin that covers specific states and municipalities, and certification is administered through the Consejo Regulador del Mezcal (CRM). The listings here are evidenced either by an importer's Mexico catalog (89) or by a product listing whose batch label was not inspected (126). We request label images and certification details from the producer before any quotation is finalised. Spirits made from agave outside the certification system appear in our agave distillates category.
